- Chicken Marsala - Boneless breast marinated with garlic, lemon, and herbs, pan seared in olive oil,
then baked in a Marsala wine sauce of mushrooms, tomatoes and sweet basil.
- New York Strip Loin - Carved at the Buffet Table and served with a mushroom sauce.
- Grilled Swordfish Steak - Swordfish Loin steak marinated in lemon, herbs, and spices then grilled over hardwood charcoal and served with black pepper lemon butter.
